The Best Damn Lasagna on Earth!

Image
The Best Damn Lasagna on Earth! Lasagna seems a simple enough idea until you try it. Honestly, it’s pretty involved. Expect to use practically every pan you own. Also plan on at least one hour of prep and one hour to cook. On the bright side, there is often leftovers, depending on how many you are feeding. Lasagna is kind of funny in that it’s one of those meals that actually tastes better reheated after a day in the fridge. The layers seem more defined and congealed, especially that pesky ricotta. PREP TIME 1 MIN COOK TIME 1 MIN Ingredients 1/2 lb beef 1/2 lb pork 1 tbsp each: oregano, basil, rosemary (or 3 tbsp of an Italian blend of herbs) 1/2 yellow onion chopped 4 garlic cloves chopped, divided 9 lasagna noodles boiled al dente 2 cans of your favorite marinara sauce (roughly 48 oz) 1 16 oz container ricotta 4 tbsp pesto 1 egg 1/2 cup parmesan shredded 4-5 cups mozzarella shredded (or a blend of Italian white cheeses) Instructions About an hour before cooking, spread out ricotta on...

Perfectly Seared Scallops

Image
Perfectly Seared Scallops Scallops are one of those things that are SO simple to cook, and yet, so simple to screw up. I have to admit I botched a few batches myself back in the day (it was like eating rubber!), but with their hefty price tag, I quickly made it my mission to learn the key to a perfectly seared scallop. And by perfect, I mean a scallop with a flavorful crust and an interior so tender it basically melts in your mouth. That’s perfection! Perfectly Seared Scallops author bakerbynature Ingredients 1 pound sea scallops, patted dry 1 tablespoon unsalted butter 1 tablespoon olive oil Freshly ground sea salt Freshly ground black pepper Lemon for squeezing, optional Instructions Remove tiny side muscle from the scallops if they have them, then rinse with cold water and pat dry with a paper towel. Add the butter and oil to a large saute pan over high heat. Generously salt and pepper the scallops. Once the butter/oil combo begins to smoke, gently add the scallops, making sure they...

BLT Pasta Salad Recipe

Image
BLT Pasta Salad Recipe BLT Pasta Salad Recipe – delicious Summer pasta salad idea! Bacon, lettuce and tomatoes with farfalle pasta and creamy dressing (mayo-free option too!) is like your favorite BLT sandwich toppings in a bowl. HOW TO MAKE BLT PASTA SALAD Crispy bacon (baked in the oven), chopped or torn Romaine lettuce, chopped tomatoes (I used on-the-vine type but Roma would be good too) are tossed with cooked and cooled pasta and creamy Ranch dressing. Great option for a lunch to work or a trip meal! Keep dressing separately until you are ready to eat. For the dressing, I mixed ranch salad dressing, mayo and sour cream. If you want to avoid mayonnaise, replace it with sour cream or Ranch. Just make sure you have about 3/4 cup of the creamy mixture to toss the salad with. It’s the perfect amount in my opinion. CHICKEN PARMESAN BAKED ZITI

Image
CHICKEN PARMESAN BAKED ZITI To make the baked ziti, I cooked up a batch of penne ziti and then tossed it with the sauce. Then for the “chicken parmesan” twist, I added in some shredded cooked chicken, chopped fresh basil, and lots of grated Parmesan. I know that traditional chicken parmesan requires you to bread and pan-fry the chicken. But I thought the dish already had plenty of flavor and texture without adding the extra fat/calories. And hey, true to the name, we’re including lots of chicken and lots of Parmesan. So I’m sticking with it. This Chicken Parmesan Baked Ziti only requires 6 ingredients and is totally delicious and comforting. INGREDIENTS: 12 ounces DeLallo penne ziti (or any pasta shape) 2 cups shredded, cooked chicken (about 2 small chicken breasts) 1 (25 ounce) jar DeLallo Pomodoro Fresco Tomato-Basil Sauce (pasta sauce) 1 1/2 cups shredded mozzarella cheese (I used 2% low fat) 1/3 cup freshly-grated Parmesan cheese 1/4 cup packed fresh basil leaves, roughly chopped D...

Spicy Shrimp Dip

Image
Spicy Shrimp Dip Spicy Shrimp Dip is so creamy and cheesy and makes a great appetizer for New Year’s or game day. It’s full of diced shrimp and flavored with both cajun seasoning plus red pepper flakes for plenty of spice. This shrimp dip is full of diced shrimp so it’s best to use very fresh shrimp if possible. If not I would buy frozen shrimp and be sure to defrost them and then blot them well with paper towels to get rid of any excess moisture. A combination of cream cheese and mayonnaise makes this dip supremely creamy. And lots of mozzarella cheese plus some Parmesan cheese give it lots of gooey cheese flavor. I like how well mozzarella melts in a dip, but you could also use Monterey Jack cheese or a combo of Monterey Jack and cheddar cheese. I like to serve Spicy Shrimp Dip with toasted baguette slices or tortilla chips. This dip really packs the flavor and if you are a fan of shrimp, you will have a hard time pulling yourself away from it. It will be a hit at your next party! Sp...

Easy Chicken Broccoli Casserole (Paleo, Low Carb, and Gluten Free)

Image
Easy Chicken Broccoli Casserole (Paleo, Low Carb, and Gluten Free) I made this casserole a few weeks ago for my dad and his friend who were coming over to do some odd jobs at my house in Nashville. They loved it and kept asking for seconds. It is very filling and will satisfy a heart appetite for many hours. Hope you like it and will share it with your family. Leave a comment and let me know how it turns out. This dish is perfect for the 21 day sugar detox too because it has no sugar or starchy ingredients. Get started on the detox here.
